Serves: 2 or 4 buns Prep: 10 min Cook: 20
- 2 cups of greens, packed (I've used spinach, arugula, collards, and kale. Even all combined!)
- 1 egg
- 1/2 tbsp coconut oil
- 2 tbsp cassava or tapioca flour
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 salt
Preheat your oven to 350 degrees.
Place greens of choice, egg, and oil into blender/ food processor/ bladed contraption. Blend until greens are chopped and combined.
Add flour, seasonings, and salt. Blend until well combined. You may have to scrape down blender sides to make sure the ingredients are mixed.
Line a baking pan with parchment paper.
Evenly spoon batter onto parchment and smooth into 3 - 4 inch circles. The more batter you use per circle, the thicker your buns will be.
Bake buns for 10 - 15 minutes, flip, and bake for an additional 5 - 7 minutes.
